El Salvador – Finca San Antonio 1890

Founded in 1890 in a strategic spot, Finca San Antonio is a historic family farm with coffee heritage. The family have proudly cared for this farm for five generations, maintaining their forefather’s values of quality, work ethic, and respect for the land and workers. Today it is under a renewal process, since they have replaced the traditional varieties that are affected by rust, for a more resistant grain, such as the Sarchimor. They have also renewed their growing techniques through state of the art technology and science for improved quality and consistency to keep up with a steady crop.

This coffee variety is a strategic blend of Sarchimor created by Lean Coffee Management Team.  Anacafé 14, Costa Rica, Marsellesa, Cuscatleco, are amongst other blends that have been designed to be both resilient and yield a sustainable cup yearly.

This particular lot of washed Sarchimor blended coffee is prized for its clarity and vibrant notes. Removing all of the cherry prior to drying allows the intrinsic flavours of the bean to shine without anything holding them back.  Finca San Antonio 1890 Washed is known for Fruit  and berry like notes that are not commonly found in washed coffees.

Fina San Antonio emphasize the collection and cutting of cherry at optimum point of ripeness, the same day it is pulped and washed with fresh spring water. After washing, the coffee is placed in the patio to dry in the sun for 3 days and 12 days in African beds until reaching 11% humidity, then it is sent to warehouses for storage and resting on parchment. These coffees are typically clean and bright (tangy acidity).
